<abstract> <p>Fresh-cut mangosteen is a minimally processed product that currently popular due to the requirement for fresh produce, quality, convenience, and minimal preparation. The process of skin removal causes fast deterioration in fresh-cut mangosteen. nano edible coating aloe vera gel or nano-ecogel can be applied delay physicochemical changes This study intended determine effect concentration immersion time maintain characteristics effects (100%, 75%, 50%, 25%, <italic>v/v</italic>) (1, 2, 3 min) on acidity, vitamin C, water content, total dissolved solids, weight loss, texture browning index were evaluated nine days cold storage. nano-ecogel, time, interaction affected best treatment was 50% 1 min.</p> </abstract>
